A Good Ol Canadian Classic: Nanaimo Bars

I was sitting on my couch watching Breaking Bad a few nights ago and decided I was craving Nanaimo Bars. Not just a little bit of a craving, but a strong one, one strong enough to get me up off the couch at 9 pm. Crazy, I know.... So I made this recipe from An Affair From The Heart (check her website out here: entertaining, cooking and all things from the heart - An Affair from the Heart).


I'm pretty sure I made this recipe in under 30 minutes... which was nice because it was already dark outside when I started. But cravings don't wait I guess?


One of my friends texted me the next day and said she saw on Reddit that people throughout Edmonton were looking for the best Nanaimo bars in the city. Well I've got them!


....And now that I have them I actually can't stop eating them, and you won't be able to either. Don't make them. Save yourself... (*winkwink)



Ingredients


Bottom Layer:

  • 1 stick (1/2 cup) unsalted butter

  • 1/4 cup granulated sugar

  • 1/4 cup cocoa powder

  • 1/4 teaspoon salt

  • 1 large egg, beaten

  • 1 1/2 cups graham cracker crumbs

  • 3 Tablespoons pecans, finely chopped

  • 1 cup unsweetened shredded coconut


Middle Layer:

  • 1 stick (1/2 cup) unsalted butter, softened

  • 3 Tablespoons custard powder

  • 1/2 teaspoon vanilla extract

  • 3 cups powdered sugar

  • 3 1/2 Tablespoons heavy cream


Top Layer:

  • 6 ounces semi-sweet chocolate, chopped in small pieces

  • 4 Tablespoons heavy cream


I find they taste better after they have been let to set overnight in the refrigerator. But sometimes you just can't wait, which I totally get...
