Because Valentines day is right around the corner and I'm so over sugar cookies. Butter > sugar always.
Check out these stunning strawberry cookies made with fresh and freeze-dried strawberries! You can easily find freeze-dried strawberries online through amazon or at specialty grocery stores (sometimes even your average grocery store). I'm lucky and work in a research kitchen with our very own freeze-dryer, so I'm able to make my own.
If you're like me, you like your glaze to set. It's so much easier for storage and the cookies will stay pretty. Add about ~1/4 cup more icing sugar to the glaze recipe than suggested. I know it sounds like a lot but trust me, the fresh strawberry contains tonnnssss of moisture.
